PUMPKIN RICE PUDDING




INGREDIENTS:


1-1/2 cups cooked rice

2 eggs

3/4 cup pumpkin purče

1/2 cup sugar

1/4 tsp. salt

1/2 tsp. each pumpkin pie spice

1/2 tsp. cinnamon

1/2 tsp. vanilla extract


DIRECTIONS:


Preheat oven to 350şF.

In a bowl, whisk milk, eggs and pumpkin until combined.

Whisk in sugar, spices and vanilla until combined.

Stir in rice.

Transfer to a glass baking dish.

Bake 15 minutes, stir again just to distribute spices that gather at top.

Bake 1 hour and 15 minutes, or until custard is set.
