MAPLE MUSTARD GLAZED PORK

INGREDIENTS:


2 pounds pork loin, boneless

2/3 cup maple syrup

3 tablespoons Dijon mustard

2 tablespoons cider vinegar

2 tablespoons soy sauce

fresh ground black pepper, to taste




DIRECTIONS:


Preheat oven to 350 degrees. Stir together maple syrup, mustard, vinegar, soy sauce, and pepper.

Place in shallow pan.

Spread evenly over pork roast.

Roast pork until internal temperature, measured with a meat thermometer,
reaches 160 degrees, about 45 minutes to 1 1/4 hours.

Remove roast from oven and let rest 10 minutes before slicing to serve.

Serves 6
