APPLE ENCHILADAS

INGREDIENTS:


21 ounces apple pie filling

6 flour tortillas

1 teaspoon ground cinnamon

1/3 cup butter

1/2 cup sugar

1/2 cup packed light brown sugar

1/2 cup water

DIRECTIONS:


Preheat oven to 350 degrees.

Spoon pie filling evenly down the center of each tortilla; sprinkle evenly with cinnamon.

Roll up, and place, seam side down, in a lightly greased 2-quart baking dish.

Bring butter, sugar and brown sugar to a boil in a medium saucepan; reduce heat, and simmer, stirring constantly, 3 minutes.

Pour over enchiladas and let stand 30 minutes.

Bake at 350 for 20 minutes.

Serve hot. Serve with vanilla ice cream, if desired.
